Granola, Yogurt and Blueberry Parfaits

Summertime brings an abundance of berries and makes me think of healthier foods.

I like granola, but not store-bought since it normally contains ingredients I’d rather not know about.  I searched for an easy homemade granola recipe with not a lot of oil.  This one’s a keeper!  I have made it repeatedly and always get requests for the recipe.

Our family enjoys granola with plain Greek yogurt and fresh berries.  I also scoop some into small Ziploc bags to carry around for snacks.  It’s great as a cereal with milk too 🙂

Jars of granola are a perfect holiday or hostess gift!

Homemade Granola

Makes 5 cups

Ingredients

  • 3 cups large flake oats
  • ¼ cup canola or coconut oil
  • ¼ cup brown sugar
  • ¼ cup honey
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • 1 tsp pure vanilla extract
  1. Preheat oven to 325°F and line a large rimmed baking sheet with parchment paper
  2. Place oats in a large mixing bowl and set aside
  3. Combine the remaining ingredients in a small bowl and whisk until smooth.  Pour over oats and combine well.  You may need to use the back of a very large and sturdy spoon to press the mixture against the sides of the bowl
  4. Spread oat mixture on baking sheet and bake for 20 minutes, stirring every 5 minutes
  5. Cool on a rack and stir after the first 5 minutes (don’t forget this step or the mixture will clump)
  6. Cool completely and add to a large mixing bowl

Add 2 cups in total of the following:

  • Your choice of toasted nuts (I used pecans)
  • Dried cranberries or your choice of dried fruit (dice if using larger fruit)
  • Sunflower seeds or pumpkin sees (if using these, add them to the oats and bake together.  They taste better when toasted)

Kitchen note:

  • Store in a tight container for up to 2 weeks at room temperature (in a cool spot)

    Great Tips! Especially having Small portable on the go snack bags of granola… Proud to say that I’ve been the lucky recipient of R’s homemade granola… My Tip : delicious as an Oatmeal topping 😀😀😀

      Oh thanks ML! I’m so glad you like it! I tried the granola with steel cut oatmeal this morning and your right, it’s a nice contrast of textures 😄
